First off, If "Ben" gives you a hint, listen real hard as he is an accomplished fisherman. A gentle soul with a rich history, though quiet since we have been talking for these few years I had some business with him on Saturday and he was gracious enough to share some bluefin...

Being that my family can only have a sitdown dinner about once or twice a week, This bit of protein was special. So mustering up what little (sorry for the pun) that I had., I got creative with our special dinner. New potatoes and corn from Delaware's bounty and a Mesclun mix of greens from my lettuce garden. Sides of a baquette of french beard with last years apple, tomato and sweet pepper chutney. Oh my I got lost in the rapture...

Anyway, here is a good tuna recipe....
Take 4 loin slabs of about a inch thick, must be fresh and chilled. Rinse the glow off and pat down with a paper towel.
Take a small frying pan and put a 1/2 cup of Sesame seeds in it and toast for a minute or so. Add a teaspoon or 2 of powdered ginger root. Remove from heat and add 2 teaspoons of extra virgin olive oil and equal amount of grape seed or sesame seed oil. Mix together with a spurt of kosher salt. Smear on Tuna, both sides. Heat your grill (must be clean) to 500+ degrees. Brush or wipe on a high heat oil such as grapeseed or peanut oil and put those bad boys on. 30 seconds to the side. You want to inside of the Tuna to be pink. My kids that are usually excited by Hotdogs and PBJ sandwichs were screaming for more. Try it you'll like it
Thanks Ben !!!!

Jim, You know that you are most welcome anytime that the blue Van isn't in the driveway. You know that my sweetie does require her privacy. She surely deserves that putting up with me and my friends.
